An Easy Weeknight Meal

This sausage sheet pan meal is a simple, quick, and flexible meal that's perfect for busy weeknights. Just chop the vegetables and sausage, toss them with some oil and spices, and toss them in the oven and dinner is served!

How to Meal Prep

If you know you'll have a busy night in the next day or two, you can meal prep this ahead of time and have it ready to toss in the oven! Just chop up the vegetables and sausage, and store them in a gallon zip lock bag. Then, when you're read to eat, put the oil and spices in the bag and shake it up until it's well coated, and cook it in the oven according to the recipe directions. I wouldn't recommend meal prepping this more than one or two days in advance, because after they're chopped, the vegetables won't stay good as long.

Substitutions

One of the best parts of this sausage sheet pan meal is how easy it is to customize and swap ingredients out, or add extra when you have items in your fridge you need to use up. Any hearty vegetable that stands up to roasting would work great in this. In particular, I think these veggies would work great:

  • Asparagus 
  • Parsnips
  • Sweet potatoes
  • Cauliflower
  • Broccoli
  • Brussels Sprouts

Because of its versatility, this recipe is perfect for using up whatever leftover vegetables you have on hand!

Ingredients

  • 12 oz smoked sausage
  • 2-3 medium carrots
  • 2-3 small to medium potatoes *
  • 1 bell pepper
  • 1 Tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1/8 tsp cayenne pepper

Directions

  1. Preheat the oven to 400 degrees fahrenheit
  2. Chop the sausage and carrots into 1/4 – 1/2 inch rounds, the potatoes into 1/2 inch cubes, and the bell pepper into 1 – 2 inch squares.
  3. Transfer the chopped sausage and veggies to a bowl, or directly to the sheet pan
  4. Pour the olive oil over the sausage and veggies, then toss until coated. Finally, sprinkle the spices over them and toss again until evenly coated.
  5. If not already on it, transfer the sausage and veggies to the sheet pan. Put it in the oven for 15 minutes. **
  6. Take the sheet pan out of the oven, stir the sausage and vegetables, and then put it back in for another 15 minutes to finish cooking
  7. Take the food out of the oven, wait 5 minutes for it to cool, then serve and enjoy!

Notes

* I prefer yukon gold or red potatoes for this, but any potato should work

** For easier clean up, put parchment paper on your sheet pan before transferring the veggies and sausage to it
